I still remember the days that my husband didn’t feel safe taking me too far from home, when my disease was really out of control, and I was ending up in the emergency room far too often. Since traveling is something that I wasn’t able to do for a while, I’m certainly not going to let my diet keep me from doing so any longer! Does the fear of sticking to a gluten-free diet have you nervous to travel outside of the country? Luckily for you, my friend Lisa from Downshiftology has you more than covered with her brand new eBook, Roaming Free!

I met Lisa through this wonderful community of bloggers, and her energy and positivity really stuck with me. I’m so thankful that she’s sharing her passions with the world, so that we can all benefit! It’s inspiring to know that despite everything she’s been through, that she never let anything get in the way of her dreams to travel the world.

Lisa was diagnosed with several autoimmune diseases within a two-year span, including: Celiac disease, Hashimoto’s, psoriasis and endometriosis. Lisa could have let her diagnoses stop her from pursuing her dreams, but thankfully she didn’t, and now we all are able to benefit from her wealth of knowledge! Lisa has traveled to all 7 continents (so cool!!!) so there’s no one better to give all of their advice and tips for traveling, while easily staying gluten-free!

Roaming Free is so much more than just a gluten-free travel guide! It’s about really living the life of your dreams, and not letting anything hold you back. Roaming Free

HONEYED LEMON GINGER BLISS BALLS

Print Recipe
Prep Time 10 mins
Refrigerator Time 10 mins
Total Time 20 mins
Servings 12 balls

Ingredients
  

  • 1 cup raw cashews
  • 1 cup shredded coconut, unsweetened
  • 2 tablespoons honey
  • 1 teaspoon fresh ginger, finely grated
  • 1 lemon, juiced and zested
  • 1/2 teaspoon ground vanilla
  • extra shredded coconut for rolling

Instructions
 

  • Place all ingredients into a food processor and pulse until the mixture is smooth, but stopping before the cashew turns into a nut butter.
  • Using a small cookie scoop, scoop out balls of mixture and roll between your hands. Then roll the bliss balls through the extra shredded coconut.
  • Place in the refrigerator for 5-10 minutes to firm up, then enjoy.
