HONEYED LEMON GINGER BLISS BALLS
Ingredients
- 1 cup raw cashews
- 1 cup shredded coconut, unsweetened
- 2 tablespoons honey
- 1 teaspoon fresh ginger, finely grated
- 1 lemon, juiced and zested
- 1/2 teaspoon ground vanilla
- extra shredded coconut for rolling
Instructions
- Place all ingredients into a food processor and pulse until the mixture is smooth, but stopping before the cashew turns into a nut butter.
- Using a small cookie scoop, scoop out balls of mixture and roll between your hands. Then roll the bliss balls through the extra shredded coconut.
- Place in the refrigerator for 5-10 minutes to firm up, then enjoy.
