With the 4th of July right around the corner it’s definitely time to make a batch of these red, white & blueberry shortcake parfaits! These are uhhhmazing, and SO easy to make! Trust me, everyone will love you if you bring this dessert to your next get together!

Take these Red, White & Blueberry Shortcake Parfaits that I created for you. They taste completely indulgent, but really aren’t! They’re made with simple ingredients that are naturally gluten-free, and the shortcake takes only a few minutes to get into the oven.
If you know me, you know my style of baking is basically tossing everything together and mixing it up. In this case, I just tossed the ingredients in my food processor and mixed! This makes for less prep time and fewer dishes. Win, win!

Red, White & Blueberry Shortcake Parfaits
Red, White & Blueberry Shortcake Parfaits
Equipment
- Oven
Ingredients
For the Shortcake:
- 1 1/2 cups almond flour
- 2 tablespoons coconut sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 egg
- 1/2 teaspoon apple cider vinegar
- 1/4 cup ghee or sustainably sourced palm shortening, softened
For the Parfaits:
- Double batch coconut whipped cream
- 2 cups strawberries, sliced
- 1 cup blueberries
Instructions
- Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
- Combine all of the shortcake ingredients in your food processor. Blend until the mixture turns into a dough. Place the dough onto the parchment lined baking sheet and flatten into a ½" thick rectangle, using your hands. Bake for 12-15 minutes, or until the center of the shortcake bounces back when lightly touched.
- Let the shortcake cool and then break up into bite-sized pieces. Layer the shortcake with the coconut whipped cream and berries. Enjoy!

Looks great, as usual! Approximately how many individual parfaits does this make? Or how many people do you think it could serve? My son’s birthday is right after the 4th so these may make a good party treat!
