These Pineapple Mango Margaritas With Chili Lime Salt are inspired by the delicious and refreshing margaritas that I enjoyed while spending the week at the beautiful Islands of Loreto in Mexico. This is my twist on the margarita that I had while I was there, only I swapped out the sugar for fruit juice, and the Tajin, for a fresh chili lime salt.
If you follow me on social media, you know that back in April I had the incredible opportunity to spend the week at Villa Del Palmar for wellness week, and I instantly fell in LOVE. Loreto and this resort were beyond my wildest dreams.
I’ve spent time in many different areas of Mexico, and Loreto completely stole my heart. It’s dessert meets the Sea of Cortez, and it’s absolutely breathtaking.
When it comes to traveling, food always plays a huge role in deciding on where I go, as what I eat is essential to me staying healthy, and it literally couldn’t have been easier to enjoy the food here. With TONS of gluten-free options, all I had to do was ask and my dietary needs were easily met.
No matter what your dietary needs are, you’ll find it super easy to enjoy delicious and healthy food at Villa Del Palmar, where everything is made in house. They take diet restrictions seriously and even have separate prep areas in the kitchen to avoid cross contamination (I saw this when I took a tour of the back of the house!). Just ask and the staff is more than happy to help you out!
Here’s an example of what I put together as a healthy breakfast from the buffet…
Thanks to my friend Beth, I also discovered that they serve the BEST gluten-free pizza that I’ve ever had. It’s literally what dreams are made of, especially when enjoyed by the pool with friends!
Of course I couldn’t pass up the fresh ceviche either…
Staying at the resort during wellness week meant that an even larger emphasis was placed on taking care of our mind and body. We started our mornings with yoga right on the beach led by the amazing Beth of Tasty Yummies, which was life-changing, to say the least. This was the view from our morning yoga…
Ever since this trip, I’ve started nearly every morning with meditation and yoga. I keep my practice simple, yet it’s brought so much peace and calm energy to my entire day-to-day life, that I can’t imagine how I ever existed before it.
Another absolute highlight from the trip was boating around the Sea of Cortez and seeing not only hundreds of dolphins swimming and playing, but we also saw several whales, two which jumped into the bright blue sky right in front of our boat. My mouth was gapped open the entire time…I couldn’t even believe the magic that I was witnessing!
We even stopped at Carmen island to hike around, have lunch and snorkel, surrounded by stunning views all around.
My friend Steph over at Stupid Easy Paleo and I enjoyed the most refreshing coconut lime aqua fresca’s while exploring the town of Loreto, and you’re in luck, as she recreated this recipe just for you!
Steph and I loving our coconut lime aqua frescas in downtown Loreto!
Then there was our hike to the 17th hole on the golf course, looking over Danzante Bay…I MEAN…
Me, Steph (center) and Beth at the top of our hike to the 17th hole!
I also couldn’t forget my experience at the Sabila Spa, where I had the best massage that I’ve EVER had, and this is coming from a girl who’s had MANY massages! After my massage I relaxed in the hot tub, sauna, steam room and enjoyed the refreshing cold plunge, all with gorgeous views of the dessert and surrounding golf course.
If you’re looking for the most relaxing and rejuvenating vacation, I can’t recommend Villa Del Palmar enough, especially when it comes to experiencing wellness week. The staff goes above and beyond to be sure that you’re loving everything about your stay and that you’re as relaxed and rested as can be.
When I arrived in Loreto I had no idea that my time spent at this resort would have such a profound impact on my entire life, and I left feeling like a brand new person. I also left already planning my next trip there so that my husband can experience this magic with me!
I looooove a good margarita made with super simple ingredients, which is why when I enjoyed this Pineapple Mango Margarita at Villa Del Palmar, I instantly knew I had to recreate my own version for you to enjoy as well! A single sip will transport you right to the relaxation Loreto. Just sayin’.
Stay tuned for details for another wellness week adventure later this year at Villa Del Palmar at the Islands of Loreto!

Hi Kristen! I have always heard great things about Mexico but due to my Jpouch I’m always nervous that the water will leave me running to the bathroom. Doesn’t look like you had any digestive upset from the water. You felt confident in the resort? Your pictures looked amazing and I love that a trip can have a profound impact on your life! 🙂 So happy for you! 🙂
Absolutely, the resort went above and beyond! All of the water here was totally safe.:)
