Over 5 ½ years ago I changed my diet, and I’ve learned a TON along the way. I used to spend hours in the kitchen prepping meals, only to basically never want to do it again. Some of you know exactly what I’m talking about. 😉 Back then it seemed as if there were limited pre-made healthy options available, so I was making everything myself. I mean, do you remember the days where you actually had to make your own cauliflower rice?! Now, there’s TONS of great pre-made options for you to choose from, which makes eating well so much easier.
As we all know, life can get CRAZY at times, but for me, healthy eating is a top priority. Changing my diet completely changed my life, and so I knew that I had to find a way to make this way of eating not only sustainable, but also super fun! Over the years I’ve recreated many of my classic favorite dishes into much healthier versions, a few of which you’ll find included in this meal plan, including a brand new recipe for grain-free and dairy-free nachos below!
Following this simple meal prep will allow you to make delicious and healthy meals all week long, in no time at all! You’ll see just how EASY it can be to eat well, without having to slave away in the kitchen. To me, none of this is about being perfect, it’s about making this lifestyle sustainable for you… And I’m gonna go ahead and guess that like me, you may not have an entire day to prep meals. 😉 As you’ll see, all you really need is some simple protein and vegetables to make the simplest meals all week long!
What I love the most about Whole Foods Market 365 is how EASY they make it to eat well. You can quickly get in and out of the store with a healthy and delicious meal that’ll power you for the day, or grab some quick ingredients to whip up something of your own! They also don’t allow any artificial colors, flavors, preservatives, or sweeteners, high-fructose corn syrup, added MSG, or hydrogenated fats in any of the food that they sell, making it even easier to choose great options.
I often run by Whole Foods Market 365 to grab a quick snack after training… Annnnd now they even carry my FAVORITE kombucha ever, Watermelon Wonder. Just sayin’!
They have so many great grab-and-go options, such as: a variety of tasty salads, snack boxes with hardboiled eggs, nuts, fruit, pre-cut vegetable noodles, frozen cauliflower rice, rotisserie chicken, a hot bar, as well as delicious Love The Wild Seafood kits!
To get you started out right for the week, I created a simple shopping list with products that can all be found at Whole Foods Market 365. No need to go to multiple grocery stores when you can find everything that you need here! This list was created assuming that you don’t have any of the items on hand, so that you know exactly what you’ll need.
This meal plan also ends with super tasty grain-free and dairy-free nachos, which I recommend pairing with Veramontes wines (organically grown & highly rated Chilean wines), Control Label Lambrusco, or Eel River “Clarity” Hard Sparkling Cider, all found at Whole Foods Market 365. As for Saturday on your meal plan, it can be a day to finish up leftovers or enjoy a meal out – whatever works best for you!

Meal Prep 101 & Dairy-free Nachos
Ingredients
For the Taco Meat:
- 1 pound cooked ground beef (from your meal prep)
- 1 1/2 tablespoons chili powder
- 1 tablespoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon cayenne pepper
- 1 teaspoon sea salt
- 1 teaspoon black pepper
For the Nachos:
- Siete Sal Y Limon grain-free tortilla chips
- Siete Chipotle hot sauce
- Siete cashew queso (or my dairy-free nacho cheese )
- cherry tomatoes, sliced
- Whole Foods Market 365 guacamole
- 2 green onions, chopped
Instructions
- Heat the ground beef in a pan over medium-low heat, and add all of the seasoning. Add a small amount of water and stir well to combine.
- To assemble the nachos: place a layer of Siete chips onto a baking sheet, or a large plate. Top with the taco meat, and add the cashew queso, cherry tomatoes, guacamole, and green onion. ENJOY!

I got all the ingredients to make this. Except my whole foods didn’t have the siete cashew queso. I’m so bummed. They said they ordered it but its been sold out. I just got some other dairy free cheese they recommended at the store instead.
