This may be the best burger that I’ve EVER eaten. I had this yesterday for lunch, right after I finished taking these pictures, and I couldn’t get over how tasty it was! That’s definitely saying A LOT, because I’ve eaten a ton of burgers in my life! These Loaded Veggie Burger Buns really take any ordinary burger to the next level, plus, who doesn’t love hiding veggies in delicious food?!
My husband inspired me to create these Loaded Veggie Burger Buns as he isn’t a big fan of having produce on his burger, so I figured, why not load up the bun with delicious veggies instead?! After several tries, these buns turned out exactly as I wanted them to, and they even “hold up” to the juiciest burger!
I created these Loaded Veggie Burger Buns using my new favorite Kale Beet Blend from Mann’s Fresh Vegetables! It’s a delicious blend of shredded kale, golden beets, kohlrabi and red cabbage. These veggie blends provide you with endless options for using them! In addition to making these burger buns, you can toss them into a salad, blend them into a smoothie, roast or sauté them!

Loaded Veggie Burger Buns
- Melt enough coconut oil/avocado oil to just barely cover the bottom of a large pan, over medium heat. Combine all of the ingredients besides the Kale Beet Blend in a bowl, and stir until well combined and there are no lumps, using a fork. Add the Kale Beet Blend and stir once more to combine well.
- Once the pan is hot, drop large spoonfuls of the kale beet blend batter into the pan, gently spreading into a circular shape, using a spatula. Cook the loaded veggie buns until the bottoms begin to brown, approximately 3-4 minutes. Flip over and cook the second side for an additional 3-4 minutes, or until browned. Enjoy!
