This potato salad is so light and so fresh…some might say it’s so fresh and so clean, clean (name that song!)…annnnd I digress… and it’s perfect to serve with just about anything, from grilled chicken or steak, pork chops (ButcherBox pork chops are my FAVE), to fish, shrimp, and so much more!

If you’re into mayo-based (and totally delicious) potato salads, you’ve for sure gotta check out my Buffalo Ranch Potato Salad that so many of you have loved! It’s been one of the very top recipes on my website for the past month!
Enjoy this recipe for my Lemon Herb Potato Salad!
Lemon Herb Potato Salad
For the Potato Salad:
- 2 pounds red or yellow potatoes, scrubbed (6 potatoes)
- 3 celery stalks, finely diced
- Bring a large pot of salted water to a boil. Add the potatoes and cook until fork tender, but still firm, approximately 15-20 minutes. Drain the potatoes. Once the potatoes are cool enough to handle, chop them into bite-sized pieces.
- Meanwhile, let's make the dressing! Combine the olive oil, lemon juice, garlic, Dijon mustard, salt, and pepper into a small bowl and whisk well. Whisk in the chives and dill and set aside.
