You, my lovely readers requested a mayo-free potato salad, so that’s exactly what I created for you today with this delicious and super simple Lemon Herb Potato Salad!
This potato salad is so light and so fresh…some might say it’s so fresh and so clean, clean (name that song!)…annnnd I digress… and it’s perfect to serve with just about anything, from grilled chicken or steak, pork chops (ButcherBox pork chops are my FAVE), to fish, shrimp, and so much more!
I’ve been SO into potato salads lately and have made this Lemon Herb Potato Salad in advance by prepping the potatoes and dressing the night before and then tossing it all together right before serving. Everyone LOVED it!

Lemon Herb Potato Salad

Ingredients
For the Potato Salad:
- 2 pounds red or yellow potatoes, scrubbed (6 potatoes)
- 3 celery stalks, finely diced
For The Dressing:
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh chives, minced
- 2 tablespoons fresh dill, minced
Instructions
- Bring a large pot of salted water to a boil. Add the potatoes and cook until fork tender, but still firm, approximately 15-20 minutes. Drain the potatoes. Once the potatoes are cool enough to handle, chop them into bite-sized pieces.
- Meanwhile, let's make the dressing! Combine the olive oil, lemon juice, garlic, Dijon mustard, salt, and pepper into a small bowl and whisk well. Whisk in the chives and dill and set aside.
