This dairy-free strawberry milk takes me right back to my childhood! Back then, I was a huge fan of the pink powder that you’d mix with milk… But I have to say, my version is soooo much more delicious! Plus, it’s completely junk-free, and only sweetened with strawberries and dates!
I spent last week in Monterey for an event with California Strawberries, and the farmer sent me home with an entire flat of strawberries that had just been picked. I instantly had so many recipe ideas that I wanted to create with them, and this was the first! I hope this recipe takes you right back to your childhood – I have no doubt it’ll be a huge hit with your kids too!
I’ve already made this dairy-free strawberry milk multiple times in the past week, annnnd I’m drinking a glass of it as I type this! I love how easy it is to make, just toss everything in the blender and you’re good to go! Out of all of the dairy-free “milks” that I’ve created, cashew milk is by far the easiest. The cashews completely break down when they’re blended, so you also don’t have to strain a thing!

Dairy-free Strawberry Milk
Ingredients
- 1/2 cup raw cashews
- 3 cups water (plus additional water for soaking the cashews)
- 2 cups strawberries, tops removed
- 4 medjool dates, pits removed
- 1/2 teaspoon vanilla extract
- pinch of sea salt
Instructions
- Cover the cashews with water and soak for 4-6 hours. If you'd like to make this faster, you can soak the cashews in hot water for 30 minutes instead. Drain and rinse well. Add all of the ingredients to your blender and blend on high for 2 minutes, or until smooth. Refrigerate the milk for 2 hours, or until ice cold – the colder, the more delicious it is! Enjoy!Note: If you don't have a high speed blender, such as a Vitamix , soak the dates in hot water for 15 minutes prior to blending. Drain the water and then add the dates to the blender.
