Creamy Broccoli Soup

I LOVE soup! I gotta say, Steph over at Stupid Easy Paleo is a total genius. Her Creamy Leek Soup is out of this world delicious, and tastes like it’s made with potatoes and cheese (but has neither in it). You’d never, ever guess that it’s actually made with cauliflower! I’ve made it several times; it’ll fool even the most suspicious eater! It’s also unbelievably easy to make, and is great to have on hand in your fridge. If you haven’t already, you must try it! SO good!

Stupid Easy Paleo’s original recipe inspired me to recreate one of my favorites, cream of broccoli soup! All I did was swap out the leeks for broccoli, added some garlic, and it was perfect!

I adapted the Creamy Leek Soup recipe from Stupid Easy Paleo by subbing 8 cups of chopped broccoli & 3 minced garlic cloves, instead of the leeks. Time to make some soup!

Ingredients –

  • 8-10 cups broccoli, chopped
  • 1 medium-sized cauliflower, chopped
  • 1 medium onion, diced (about 1 cup)
  • 3 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 1 cup coconut milk
  • 1-2 tbsp ghee (optional)
  • Salt & pepper to taste

For the full list of instructions, click HERE. I followed the instructions exactly, just using broccoli instead of leeks, and adding garlic. I also used an immersion blender instead of a regular blender, but either works great! Enjoy!!

    Kristen, this is so good! So simple, too. Believe it or not, I hate vegetables and will do anything to make them attractive to eat. Having chosen the Paleo diet several months ago, hating vegetables is not a good thing :-/ I have done very well though, roasting, baking, steaming everything I can think of. I love Paleo, and I feel great. Thank you for making a difference.
