With Father’s Day coming up this month, my family is planning to have a “Burger Bar” at my parent’s house to celebrate the day, so I decided to whip up a special burger just for the occasion! These coffee rubbed barbecue bacon burgers that I created are insane – they turned out even more delicious than I thought they’d be! I used Dog’s Day Spice Rub, which features my very favorite coffee from San Francisco Bay Coffee Company! It really took these burgers to a whole different level, and the sweet & spicy barbecue sauce compliments them perfectly! This spice rub is sooooo good, and it’s definitely a necessity in your pantry!
Thinking back over my childhood, I realize just how great I had it. My dad worked incredibly hard to give my siblings and I everything that we could ever need. Some of my earliest memories of my dad were when he used to come home from work and I would be so excited to run out to his truck. He would let me sit on his lap and pretend to drive, which was SO MUCH FUN as a tiny kid! I always thought that my dad was just the coolest, and he still is. He was my protector when I was young, and I knew that I never had to worry about anything when he was around.

My dad completely spoiled us kids. I remember one time in particular when my dad came home from work and slipped a $100 bill in each of our rooms, letting us get whatever we wanted! I have no memory of what I bought with the money, but looking back I realize just how much it meant to my dad to be able to do that for us. I also remember spending the day with him at work, and afterwards he took me to a local toy store to pick out any toy that I wanted. Out of everything, I chose a snow globe with a miniature carousel in it. I kept it on the nightstand next to my bed for years, and that became my favorite toy because of the special memory attached to it.
The reason that I’ve always wanted to start my own business is because of my dad. Since before I was born, he’s owned his own construction company. Although he has always worked incredibly hard, the trade off of getting to be his own boss totally appealed to me. Even long before I knew what I wanted to do for a career, I always knew that I would work for myself, and here I am today!
When I asked my dad what the hardest part of raising four kids was, he said that it was definitely disciplining us. I don’t even like disciplining my dogs, and they don’t talk back… So I can imagine how hard it must be to discipline a child who can! Often, my dad only had to give us the “look” (or the death-stare, whatever you want to call it!!!) to keep us kids in line… I’m guessing many of you out there may know about this “death stare!”
My dad went through a lot of pain watching me suffer from a chronic disease when I was a kid, and probably much more than I even know. As a parent, I can’t imagine what it would be like to watch your own child suffer. I think back to my very first hospital stay when I was 12 years old, and my dad was there everyday. Looking back, I know it couldn’t have been easy, but I’m so grateful that I have the memories of him being by my side. While dealing with a chronic disease is something that I would never wish on anyone, the fact that I was so sick, and for so long, makes life even sweeter, now that I’m so healthy. Sometimes you don’t know what you truly have, until it no longer exists.

Coffee Spice Rubbed Barbecue Bacon Burgers
For the Sweet & Spicy Barbecue Sauce:
- 2 cups tomato sauce
- 1/2 cup coconut sugar
- 1/4 cup honey
- 1/4 cup coconut aminos
- 3 tablespoons apple cider vinegar
- 1 tablespoon liquid smoke
- 2 teaspoons Dijon mustard
- 3 teaspoons onion powder
- 2 teaspoons sea salt
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 1/2 teaspoon garlic powder
For the Burgers:
- 2 pounds ground beef
- 6 teaspoons Dog Day Spice Rub - 3 Knucklehead Rub
For the Burger Toppings:
- 1 head butter lettuce
- 12 slices bacon, cooked
- 1 small red onion, thinly sliced
- 1 avocado, pitted and sliced
- Combine all of the ingredients for the barbecue sauce in a medium sized saucepan. Bring the mixture to a simmer over medium heat, then reduce to medium-low and gently simmer for 30 minutes, whisking occasionally.
- While the barbecue sauce is cooking, let's make the burgers! Preheat your grill to medium heat. Gently shape the ground beef into 6 burger patties (the more the beef is handled, the tougher it will become). Sprinkle ½ teaspoon of the coffee rub on each side of the burger patty.
- Place your burger patties on the grill, close the lid and let cook 3-4 minutes. Then, flip the patties, close the lid, and cook for 3-4 minutes longer, or until the burgers are cooked to your liking.
- Place the burgers on top of the butter lettuce, and top with the barbecue sauce, bacon, red onion & avocado. And most importantly, enjoy!!!
