Back when I first changed my diet in 2013, I discovered that I didn’t do well at all with corn, which is pretty much a staple in Mexican food. Then, after eliminating corn for a few years, I tried it once again and found that now I do just fine with it! I still rarely eat it, as I recognize that I have a limit that my body does well with, but I do love being about to enjoy corn tortilla chips at a restaurant, or on vacation! It’s pretty amazing what healing my gut has done for my overall health, along with the foods that I can tolerate.
