I have to admit, my first experience with tasting chimichurri sauce was probably the least authentic, BUT it was at one of my favorite places – Disneyland! Actually it was California Adventure, but you get the idea. Did you know that eating gluten-free in Disneyland is pretty much the easiest ever? They’ll even have the chef come out to talk to you about any food allergies that you have, minus the crazy eye when you mention gluten!
Anyways, California Adventure has this little restaurant where you can get meat or veggie skewers, with chimichurri sauce. Let’s just say that I instantly fell in love with this sauce. Since then, I’ve had many authentic versions, and I equally love them all. I knew that I needed to make my own version of this delicious sauce at home, so that I would know exactly what went into it.
The version I created is SO GOOD, and pairs well with so many dishes! It instantly makes chicken way more exciting, and is also great with steak, fish…you name it! Plus, it’s crazy easy to make!

Chimichurri Sauce
Ingredients
- 1 cup packed fresh parsley
- 1/4 cup packed fresh cilantro
- 1/4 cup red onion, chopped
- 1/2 cup red bell pepper, chopped
- 3 garlic cloves, peeled (approximately 3 teaspoons)
- 1/3 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon sea salt
Instructions
- Place all of the ingredients into your food processor. Pulse until well combined. Serve immediately or store in an airtight container in the fridge for up to 3-4 days.
