Chicken Zoodle Soup

Trade your noodles for some zoodles! Wait, what? If you’re new to the land of zoodles, I’m about to introduce you to one of my very favorite things! Zucchini noodles, AKA zoodles! Cut into a noodle like shape, either using a julienne peeler, or a spiralizer (which I highly recommend), and zucchini is completely transformed! Zoodles have completely replaced pasta in my eyes, they’re that good! Even my 3 year old nephew loves them!

I know most people are crazy busy, so I was determined to make this soup super easy to make. That’s exactly what I did, and it turned out perfectly! I highly recommend making this with homemade broth. It not only takes the flavor to another level, but the healing benefits of homemade broth are truly incredible! Happy Cooking!!

Ingredients –

  • 2 lbs chicken breasts, cut into bite size pieces
  • 1 small onion, diced (about 1 cup)
  • 2-3 cloves garlic, minced
  • 2 medium carrots, peeled and thinly sliced (about 1 ½ cups)
  • 2 celery stalks, sliced (about 1 ½ cups)
  • 1 cup celery root (also called celeriac) peeled and chopped into ½” cubes
  • 8 cups chicken broth
  • 2 tsp fresh thyme, minced (or ½ tsp dried)
  • ¼ cup fresh parsley, minced (optional)
  • 2-3 small zucchini, made into zoodles using either a julienne peeler or spiralizer
  • Salt & Pepper to taste

Instructions –

Add all of the ingredients into a large pot, except for the thyme, parsley (if using), and zucchini.

Cover, and bring the pot to a boil.

Once boiling, reduce heat and simmer uncovered for 30 minutes.

Add the thyme and parsley (if using) during the last 5 minutes of cooking.

Right before serving the soup, drop the zoodles into the pot and give it a good stir.

Serve with my easy drop biscuits, or my nut-free drop biscuits!

    I just found you from the Stupid Paleo site. 🙂 I’m not Paleo but am starting an elimination diet to identify the root cause of some of my health issues (some of which sound similar to yours – inflammation, sinus infection, etc.). Anyway today I had chicken broth and corn chips for lunch (not perfect but I’m still learning) and I thought wow this broth would be so much better with veggies and noodles. But what are some GF noodles that would be good in soup? I think zoodles are my answer! I’m going to get some zucchini and other veggies to put in my broth and make it so much better. 🙂

      I never loved zucchini either, Jim! That was until I discovered zoodles! They’re amazing under pasta sauce, or any kind of sauce! I’m working on a recipe for zoodles with non-dairy alfredo sauce 🙂

    Also a good substitute for spaghetti, with olive oil and some herbs, or mushrooms, or shrimp, or whatever you would put with pasta. Tasty and versatile depending on what you like!

    Zoodles are delicious. I work in an Italian restaurant, and one of our dishes (linguine and clams), incorporates julienned zucchini along with the pasta. Our guests initially met the dish with some skepticism, but that disappeared the moment they gave it a chance. Also, have you ever considered sauteing the carrot/celery/onion mix before adding it to the soup? Doing so really concentrates the sugars in the vegetables before exposing them to the broth. As I’ve never tried your way, I wonder how different the results would be?

      That’s so great to hear, I haven’t come across any restaurants had incorporated julienned zucchini! My husbands favorite pasta is linguine and clams, and now that we don’t eat pasta, I’d actually thought to recreate it with noodles! Typically when I make soups I sauté the veggies first, and then add the broth and any remaining ingredients. My goal with this soup was to make it so that literally anyone, even someone with hardly any time, could make it. I feared that it would lack flavor or wouldn’t be as good, but I was amazed at how incredible it tasted! Thanks so much for the comments!

          I follow a paleo diet, which took out all grains and gluten, so no pasta 🙂 Have you read my story on my blog? It’ll help explain it more, I was very sick for a long time, and eating this way has completely healed me. Makes giving up pasta MORE than worth it! My husband went paleo to support me, but noticed tons of great changes in his health as well, and he was already a healthy guy!

      Hi David! I love zoodles, they really trick your mind into thinking you’re eating pasta, especially in soup! I haven’t tried freezing this yet, but I’m sure it would be great 🙂

    This soup looks great. Putting the noodles in the hot broth reminds me of Japanese or Vietnamese methods of Soup making. Do the noodles fall apart if soup it is reheated?

      Thank you! The zoodles won’t fall apart when reheated, but they do become a little overcooked. I would suggest leaving the zoodles out of the large batch, and just adding them to individual bowls, pouring the very hot soup over them. That’s what I typically do if I plan to have leftovers 🙂

    Hellooo, you were so right! I gave these another try, this time cooking in a sassy vegetable stock with extra garlic and ginger. For some reason I needed them cooked longer so they’d feel more noodle-y. But they soaked up the stock flavor and were just delicious. So ok, you’ve got another convert!
