Trade your noodles for some zoodles! Wait, what? If you’re new to the land of zoodles, I’m about to introduce you to one of my very favorite things! Zucchini noodles, AKA zoodles! Cut into a noodle like shape, either using a julienne peeler, or a spiralizer (which I highly recommend), and zucchini is completely transformed! Zoodles have completely replaced pasta in my eyes, they’re that good! Even my 3 year old nephew loves them!
I know most people are crazy busy, so I was determined to make this soup super easy to make. That’s exactly what I did, and it turned out perfectly! I highly recommend making this with homemade broth. It not only takes the flavor to another level, but the healing benefits of homemade broth are truly incredible! Happy Cooking!!
Ingredients –
- 2 lbs chicken breasts, cut into bite size pieces
- 1 small onion, diced (about 1 cup)
- 2-3 cloves garlic, minced
- 2 medium carrots, peeled and thinly sliced (about 1 ½ cups)
- 2 celery stalks, sliced (about 1 ½ cups)
- 1 cup celery root (also called celeriac) peeled and chopped into ½” cubes
- 8 cups chicken broth
- 2 tsp fresh thyme, minced (or ½ tsp dried)
- ¼ cup fresh parsley, minced (optional)
- 2-3 small zucchini, made into zoodles using either a julienne peeler or spiralizer
- Salt & Pepper to taste
Instructions –
Add all of the ingredients into a large pot, except for the thyme, parsley (if using), and zucchini.
Cover, and bring the pot to a boil.
Once boiling, reduce heat and simmer uncovered for 30 minutes.
Add the thyme and parsley (if using) during the last 5 minutes of cooking.
Right before serving the soup, drop the zoodles into the pot and give it a good stir.
Serve with my easy drop biscuits, or my nut-free drop biscuits!
looks delish!!! cant wait to try it out.
Hope you like it, Tom! You gotta try out those biscuits, they’re the one’s I was telling you about 🙂
Can’t seem to find the biscuit recipe. Can you repost?
Looks like the author of that website removed the recipe 🙁 Here’s a link to my easy drop biscuits, they’re my favorite! https://livinglovingpaleo.com/2014/04/02/drop-biscuits/ Also, if you need a nut-free version made without almond flour – https://livinglovingpaleo.com/2014/04/25/nut-free-drop-biscuits/ 🙂

Don’t you just love celeriac and zoodles in soup?!? So good! And I’ve been obsessed with thyme in my dishes lately! This is making me hungry for a bowl of soup for breakfast!
I do, thanks to you, Deanna!! So yummy! My hubby loves it too! I have a huge bush of thyme in my garden, I love using fresh herbs!
Excited to give this a try. What better way to kick a cold or a flu then with chicken zoodle soup?
Hope you love it, Danielle! I swear by it, it always kicks out any bug I feel coming on 🙂
The best soup ever!!!!! <3
So yummy, Christy!! So happy you love it too! <3
I just found you from the Stupid Paleo site. 🙂 I’m not Paleo but am starting an elimination diet to identify the root cause of some of my health issues (some of which sound similar to yours – inflammation, sinus infection, etc.). Anyway today I had chicken broth and corn chips for lunch (not perfect but I’m still learning) and I thought wow this broth would be so much better with veggies and noodles. But what are some GF noodles that would be good in soup? I think zoodles are my answer! I’m going to get some zucchini and other veggies to put in my broth and make it so much better. 🙂
I love this Christine!! Progress is all that matters 🙂 I truly hope you find my blog helpful. Zoodles are the best in soup! Sounds like you’re doing great already, best wishes for perfect health!
Delicious, I think my Italian grandmother used to make something of the sort!
Love that, Greg! Your grandmother must have been pretty amazing!
What kind of bowel is that–it must be made out of stone!
That really transcends the soup experience into another place.
:^]
It’s pretty awesome, huh? My mother in law found it for me!
That looks good!

Great idea. I also use spaghetti squash, but this will be a nice change.
I never thought to use spaghetti squash, what a great idea!
Looks so so awesome, colorful and warm! Can you send it to me?
I totally would if I could! 🙂
I’ve never had any use for zucchini. Until now. Wonder how it will work under pasta sauce.
I never loved zucchini either, Jim! That was until I discovered zoodles! They’re amazing under pasta sauce, or any kind of sauce! I’m working on a recipe for zoodles with non-dairy alfredo sauce 🙂
Thanks for this great idea of using zucchini for noodles – I cannot eat white pasta any more and well, this is an awesome and nutritious tip!!! yum
Hope you love them as much as I do! I used to LOVE white pasta, now zoodles have completely replaced my desire for them!
Great in this really cold weather.
Perfect time of year for soup 🙂
Also a good substitute for spaghetti, with olive oil and some herbs, or mushrooms, or shrimp, or whatever you would put with pasta. Tasty and versatile depending on what you like!
Absolutely Sara! I love zoodles with bolognese!
I love that you call them zoodles:)
Gotta make it fun to say 😉
Looks delicious. I’ve never had zoodles. I’m definitely going to try this. In fact I’m off to the green grocer’s now :-).

Thanks for reblogging this, I truly appreciate it! Making zucchini into zoodles really changes everything about it, it hardly registers as a vegetable anymore. Hope you like it, I’d love to hear what you think!

I got my ZOODLER! I got my Zoodler!
WHOOOOHOOOO!!!! Guess what I’ll be making today! Nom-Nom:-)
YES!!!! Timberly, do you love it, or what?!
Zoodles are delicious. I work in an Italian restaurant, and one of our dishes (linguine and clams), incorporates julienned zucchini along with the pasta. Our guests initially met the dish with some skepticism, but that disappeared the moment they gave it a chance. Also, have you ever considered sauteing the carrot/celery/onion mix before adding it to the soup? Doing so really concentrates the sugars in the vegetables before exposing them to the broth. As I’ve never tried your way, I wonder how different the results would be?
Thanks for the post!
That’s so great to hear, I haven’t come across any restaurants had incorporated julienned zucchini! My husbands favorite pasta is linguine and clams, and now that we don’t eat pasta, I’d actually thought to recreate it with noodles! Typically when I make soups I sauté the veggies first, and then add the broth and any remaining ingredients. My goal with this soup was to make it so that literally anyone, even someone with hardly any time, could make it. I feared that it would lack flavor or wouldn’t be as good, but I was amazed at how incredible it tasted! Thanks so much for the comments!
Why don’t you eat pasta anymore?
I follow a paleo diet, which took out all grains and gluten, so no pasta 🙂 Have you read my story on my blog? It’ll help explain it more, I was very sick for a long time, and eating this way has completely healed me. Makes giving up pasta MORE than worth it! My husband went paleo to support me, but noticed tons of great changes in his health as well, and he was already a healthy guy!
I’ve heard of that, glad it helped 🙂
Thanks, Mark! 🙂
This looks delicious! I have to try this!
I hope you love it as much as I do!
Zoodles seem like a great alternative to noodles, thanks for sharing this with us! The recipe looked so easy to make. This is great for a quick lunch or even a snack when you are in a rush to go. It must freeze well too – have you tried it?
Hi David! I love zoodles, they really trick your mind into thinking you’re eating pasta, especially in soup! I haven’t tried freezing this yet, but I’m sure it would be great 🙂
yummy!
I will try this, delicious and healthy!
Hope you enjoy it!!
I think I am going to try this out!
Let me know what you think if you do! 🙂
These look delicious and healthy. Can’t wait to try it. Especially on cold days =)
Thanks, Andrea!! Hope you enjoy it! Perfect for a cold day 🙂
Wow wow wow! I’m going to cook a huge batch of this! Incredible. And hey, I love chicken, so it’s already a winner, but throw in zucchini 😉 wam.
Hope you LOVE it! 🙂

The next step to true healthy eating— no grains!
This soup looks great. Putting the noodles in the hot broth reminds me of Japanese or Vietnamese methods of Soup making. Do the noodles fall apart if soup it is reheated?
Thank you! The zoodles won’t fall apart when reheated, but they do become a little overcooked. I would suggest leaving the zoodles out of the large batch, and just adding them to individual bowls, pouring the very hot soup over them. That’s what I typically do if I plan to have leftovers 🙂
This sounds absolutely delicious!
Thank you!!

When it is super cold this is great.
Hellooo, you were so right! I gave these another try, this time cooking in a sassy vegetable stock with extra garlic and ginger. For some reason I needed them cooked longer so they’d feel more noodle-y. But they soaked up the stock flavor and were just delicious. So ok, you’ve got another convert! Bon appetit and good health, Mary
So, so happy to hear that you loved the zoodles!! Best wishes to you!! <3
Thank you! I appreciate your recipe — it’s a real keeper. I started making noodles from daikon radish just last week; now zucchini will be a nice addition too. Your website is beautiful, more power to you!
Thank you so much!! Great idea to make daikon radish noodles, very creative!
Do you cook the chicken before adding it to the pot?
Nope! This soup is super simple and meant to be cooked altogether in one pot 🙂
