Bacon & Rosemary Roasted Sweet Potatoes

I meant to get this bacon & rosemary roasted sweet potatoes recipe up a couple weeks ago, but ya know, sometimes life just happens and work needs to be set aside for a bit! I took last week completely off of work and basically binge watched Stranger Things on Netflix and spent lots of time in the sunshine and at the beach! I couldn’t have asked for a more restful week, and now I’m so happy to be back to work!

Bacon & Rosemary Roasted Sweet Potatoes

I’ve made these bacon & rosemary roasted sweet potatoes multiple times already, and they’re not only super easy to make, but they’re soooo good! I love having these for breakfast along with eggs, but they would also be amazing served with my balsamic grilled chicken or chipotle aioli!

Bacon & Rosemary Roasted Sweet Potatoes

Equipment

  • Oven

Ingredients
  

  • 2 large sweet potatoes, diced into 1 inch cubes
  • 1/2 pound bacon, cut into ½ inch pieces
  • 2 tablespoons fresh rosemary, chopped and divided
  • Sea salt & pepper, to taste

Instructions
 

  • Preheat your oven to 400 degrees. Line two baking sheets with parchment paper .
  • Place the sweet potatoes on the lined baking sheet. Add the chopped bacon and 1 tablespoon of the rosemary on top of the sweet potatoes. Sprinkle with sea salt and pepper.
  • Roast the sweet potatoes for 20 minutes. Using a spatula, flip the sweet potatoes to roast the opposite side. Rotate the trays in the oven (top to bottom, vice-versa) and roast for 10-15 minutes, or until the sweet potatoes begin to brown and the bacon is crispy. Remove the trays from the oven, toss with the remaining rosemary and enjoy!
