This 15-Minute Pork Stir-fry turned out even more delicious than I expected, and it’s become a staple in my house! This meal is made in just one pan and it’s loaded with veggies – all of which you can switch up to use whatever you have on hand.
I loved serving this as is, but you can also serve it over cauliflower rice (I use the pre-made version from either Trader Joe’s or Whole Foods), or even white rice.
Feel free to swap out any protein that you like/have on hand for the ground pork as well. If you’re new to coconut aminos, it’s essentially a soy-free and gluten-free soy sauce substitute, made from the sap of coconut trees. If you prefer your stir-fry with extra sauce, simply double the sauce recipe below!

Here’s what I did to create this 15-Minute Pork Stir-fry:
STEP 1: GATHER THE INGREDIENTS & MAKE THE SAUCE
Here I have 1 lb ground pork, carrots, zucchini, green beans, and all of the ingredients to make the sauce. You can use any vegetables and protein that you’d like!
For The Sauce:
- ½ cup coconut aminos
- ½ teaspoon garlic powder
- ½ teaspoon ground ginger
- ¼ teaspoon fish sauce
- ½ teaspoon sea salt
Combine all of the sauce ingredients in a small bowl. Set aside.
STEP 2: HEAT THE PAN
I melted approximately 1 tablespoon of coconut oil in a pan over medium heat.
STEP 3: COOK THE PORK
Saute the ground pork until cooked through, approximately 4-5 minutes. Place the ground pork into a clean bowl and set aside.
STEP 4: COOK THE VEGGIES
Add the carrots to the pan. Add 2 tablespoons of water to the pan and cover and cook for 3 minutes. Add green beans & zucchini to the pan. Add more water if needed and cover and cook for 2-3 minutes, or until all of the veggies are tender. Place the veggies into the bowl with the ground pork.
STEP 5: REDUCE THE SAUCE
Reduce the heat to medium low. Pour the sauce into the pan and reduce for 3 minutes, or until thickened, whisking occasionally.
STEP 6: ALL DONE
Add the ground pork and veggies back into the pan. Stir to combine and ENJOY!
