10-minute Salmon With Strawberry Basil Salsa

I’ve been on a HUGE salmon kick this summer, sometimes having it twice in one day! I love having smoked salmon for breakfast and this pan cooked 10-minute salmon for dinner! This is one of my absolute favorite meals to make, as it literally takes less than 10 minutes and there’s hardly any cleanup.

While I’ll always love my salmon with mango salsa and creamy lemon dill baked salmon, I’m totally digging this strawberry basil salsa right now! It’s crazy easy to make and SO fresh & delicious!

While making this salsa you can finely dice the ingredients, if you’d like to make it super pretty and uniform, but I’m all about saving time, so into the food processor everything goes! I personally think it’s just as pretty blended up!

Equipment

  • Stovetop

Ingredients
  

For the Salmon:

  • 2 tablespoons ghee or grassfed butter
  • 4 salmon filets
  • Sea salt & pepper, to taste

For the Salsa:

  • 2 cups strawberries, green tops removed
  • 1/4 cup red onion, roughly chopped
  • 1 cup packed fresh basil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt

Instructions
 

  • Melt 1 tablespoon of the ghee in a large cast iron pan over medium heat. Rinse the salmon under cold water and pat dry with paper towels. Sprinkle with sea salt and pepper.
  • Once the pan is hot, add the salmon to the pan, skin side down. Immediately cover the pan with a lid and let the salmon cook for 4-5 minutes, just until the top of the salmon is just beginning to cook through. Remove the lid from the pan and add the remaining 1 tablespoon of ghee to crisp the salmon skin. Cook for 1-2 more minutes, or until the salmon is cooked through and firm to the touch. Remove the salmon from the pan and place onto individual plates.
  • While the salmon is cooking, place all of the salsa ingredients into your food processor. Pulse until the strawberries, basil and red onion are finely chopped and all of the ingredients are combined.
  • Top the salmon with the strawberry basil salsa and enjoy!
